We are a family business that began in 2001. It all started with a backyard, neighborhood pir roast; we built a fieldstone fire pit in the backyard and after a few years of great pig roasts at home, we decided it was time to 'take our act on the road'. After a lot of research and knowing our love to cook with fruitwood, we knew the propane trailer ovens were not for us; so we did what we do best, we set out to build our own roaster. With the help from a talented machinist, we were on our way to becoming what we are today - a full-time BBQ Company.
what you can expect
After we book your event (pig roast), we come to your site and go over the details. We make sure we can set up where you want us. Our equipment is not that large but it is on a small trailer and as an example, it may not always fit through a small gate. But don't worry! We have been known to cook in driveways and even front lawns. We always find a way to make it work for you!
In most cases, depending on serving time, we start our cooking around 6:00-7:00am. Our goal is that when you wake up on the morning of your event, you will be in the partying mood as you look out your door or window and see your pig roasting right there.
weather concerns?
After we pick the date and receive the deposit, your date is BOOKED! This practice is to safeguard you in case of bad weather.
If the weather is bad and raining, we cannot cook over an open flame. If the party must go on, the pig will be cooked off site, and prepared ready to eat for your party. We can also serve the pig cut up (pulled-pork-style). If your party is planned for Saturday and Mother Nature is not cooperating, you will have SUnday to fall back on as a rain date.
